Coldweather Crockpot Chili

And here I thought we were having a mild winter. The temps are low and it has me craving something warm for dinner. Enjoy the recipe!



Coldweather Crockpot Chili

Ingredients:
  • 1 package ground turkey (I got 94/6)
  • half a large onion, diced
  • 3 small squash (I used 2 zucchini, 1 yellow squash), diced
  • 1 large carrot, shredded
  • 2 cans diced tomatoes
  • 1 24oz jar Arrabbiata pasta sauce
  • 1 can red kidney beans
  • 1 can cannellini beans
  • salt, pepper
  • 2 tsp garlic powder
  • 1 tbsp chili powder
  • 1 tbsp honey
  • 1 1/2 tsp cumin
  • 1 tsp red pepper flakes
  • pinch of cayenne pepper
  1. Saute diced onion in olive oil until they begin to brown
  2. Add ground turkey, and saute until turkey has cooked through
  3. Season the turkey and onion mixture with salt, pepper, and garlic powder, then toss into the crockpot
  4. Add the rest of the ingredients into the crockpot
  5. Mix well
  6. Cook on low for 8 hours
  7. FEAST :)
I topped it off with 2% Fage greek yogurt, shredded cheddar and jack cheese, and scallions. Eaten with saltines, this was the perfect dinner on a cold night
